Meet The Chef
I grew up in a strong Italian-American home with roots firmly planted in the southern part of this country and Italy. As a second generation Italian-American, I grew up understanding the importance of the family meal.
Because both parents worked outside of the home out of necessity, I began cooking at the age of 14. This is where my passion for being in the kitchen began and grew stronger. I watched as my mother, who was a native Floridian, cooked not only the amazing dishes she grew up with, but also the dishes she learned from my Italian grandmother. Sunday dinners were the best, especially when my grandmother came for dinner and my dad carried in the big cutting board. I knew fresh pasta was on the menu that day, and I was fascinated watching as granny rolled the dough between her fingers to make Cavatelli.
While attending The French Culinary Institute, I learned not only how to prepare wonderful French cuisine, but also, technique, which is the foundation in the preparation of any meal. I also learned to tap into my creative side, in order to get my creative juices flowing. A classmate once told me “Karen, your expertise is if I were to give you an ingredient, you will come up with the perfect dish.” I rather liked that.
I believe in and passionately promote cooking with sustainable, organic and local products. I will always use the freshest ingredients available to me.
So, now that you know a little about me, I would love to get to know about you and your family.
